Aloo Tamatar Curry. Aloo Tamatar Sabzi. Spicy Potato Vegetable.

Boil few potatoes.


Peel your Potatoes.


Preparation for the curry: Cut your boiled potatoes into large pieces. Mash 1 potato and keep it aside, this will be used to thicken the gravy. Finely chop small piece of ginger, coriander , 2 tomatoes and 4-5 garlic pods.Slit green challis, 1tsp of ginger-garlic paste. Keep the below ingredients ready.


In a deep bottom pan or kadai take 2 tsp of vegetable oil and once hot add half tsp of cumin seeds.


Let the cumin crackle.


Add half tsp of small black mustard seeds.


Add 1tsp of ginger-garlic paste.


Cook it for 2-3 minutes.


Add slit green chilli, chopped garlic and ginger.


Cook it for 1-2 minutes.


You will need 1tsp each of turmeric, chilli, coriander and cumin poder.


Add all the above spices.


Stir for few minutes and you'll notice that the oil starts separating from your spices.


Now, it's time to add your chopped tomatoes.


Stir well.


Cover it with a lid for 3-4 minutes.


Now, once your tomatoes are soft and spices are well blended together add your cut and mashed potatoes.



Mix all of them together by stirring for 1 minute..


Add 1 cup of water. Water depends on the consistency of gravy you need.


Stir well.


Cover it with a lid for 1 min. Your flame should be on high.


Remove the lid and add your chopped coriander.


Add half tsp of garam masala.


Stir well and you are ready with your super tasty potato curry.
