Aloo-Gobhi-Matar Masala Dry Veg Recipe. Poatato-Cauliflower-Peas Dry Vegetable Recipe.

Pick smaller flower pieces from your cauliflower. You can also cut them into medium pieces and in a pan with 1tsp of vegetable oil toss them for few seconds.


Cover the lid for 4-5min to make the cauliflower soft.


Add pinch of salt to it.


And then let the flowers turn golden brown on a high flame with the lid removed.


Once soft and golden keep them aside.


Now, you'll need few boiled potatoes. Make sure not to over boil them.


Cut them into 4 equal parts.


In the same pan with 1tsp of vegetable oil toss your cut potatoes and let it turn brown without covering the lid.


Keep both of them aside.


You'll need onions, garlic, green chillies and garlic.


Chop them all.


Now in a pan with 2tsp of oil add the below ingredients(cardamom, star anees, bay leaves, cinnamon and cloves)


Toss them all.


Add half tsp of ginger garlic paste.


Stir them together.


You'll need below ground masalas.(1tbsp each of turmeric, chilli, coriander, cummin and salt to taste)


Add them all


And mix all the masalas and spices together.


After few minutes, once you see the the oil starts to separate from the masalas add 1 chopped tomatoes. 


Lets the pulp mix well for few more minutes, you might need to cover the lid in between.


Mix your fried cauliflower and potatoes into the masalas.


Add matar/peas and half tsp of garam masala to it.


After few minutes of stirring add 1tsp of butter to the vegetable and you are done!!
