Imli Chutney/ Tamarind sweet and sour chutney(sauce)


Take around 50-100gms of tamarind.


In a small bowl of water soak the tamarind for few minutes.


Ingredients required: salt, chaat masala(1tsp), chilli powder(1tsp), [whole coriander seeds, whole cumin seeds and dry red chillies-all 1tsp dry roast and grind to make a powder] also commonly known as dahi wada masala


                                In a pan with 1tsp of vegetable oil add red chilli, cinnamon stick, paanch                                                            foran and bay leaves.


                In a large bowl take your soaked tamarind pulp, add 1-2 cups of water and try to                                                                  mash the pulp in water.


         Once you hear the crackling after tempering add the tamarind syrup, make sure you filter                                                             the tamarind syrup.


Filter out all the tamarind pulp as shown below.


                                         After few minutes of stir add salt and chilli powder.


                                                     Also add other masalas as mentioned above. 

                               
                                           Let it boil for few minutes stirring it in a while.


                                           Now, you'll need jaggery/sugar.


                                        Add grated jaggery in the boiling tamarind syrup.
                                     

                                        Also add 1/4th cup of sugar.


Now let it boil for few more minutes, till you start to feel the stickiness.


                                        Add few pinch of garam masala.                                     


                             And you are done with super silky and smooth tamarind sweet                                                                                          and sour chutney.
