Creamy Corn and Spinach Vegetable Curry. Corn Palak Veg Recipe.



You'll need spinach 2-3 bunch and 1-2 sweet corn.


Roughly chop the spinach.


Clean the spinach in a running water removing all the dirt.


Drain water.


Now in a boiling water dip all the chopped spinach.


Let it boil.




Make sure you don't cover it with the lid, this is done in order to keep the fresh green color of Spinach.


After few minutes, once the spinach starts to feel soft, drain the water and keep it aside.


Here comes the corn.


Peeling corn is easier when it's done as shown below.



Once it's done keep them in a separate bowl.


Clean the above corn in a running water.


Take 1 onion, 4-5 garlic pods, green chilli and 1 tomato.


Chop the above veggies and keep aside.


In a pan with 1tsp of ghee/butter add bay leaves, cinnamon stick, star anees and lavang.


Once the crackling starts and you start feeling the aroma, add the above chopped veggies except tomatoes.


After few minutes of toss and 1tsp ginger garlic paste.



Stir fry for few min, then add 1tsp each of turmeric , chilli , coriander  and cummin powder and salt to taste.



Stir fry for few till oil starts separating from the masalas.


Add hopped tomatoes.


Keep frying till the oil separating again.


Now add your corn. Please note that keep aside 2tsp of corn aside because you'll need them later.



Keep frying.


Cover the lid and let it cook for 10-13 min.


Once the corn gets softer, it;s time to add your spinach.


In a grinder add your blanched spinach with 1-2 tsp of corn in it.


Grind the above.


Now in a cooked corn with all the masalas add the spinach and corn paste.



Mix them properly.



Now cover the lid for 5-8 minutes and let it cook.


It's time to add garam masala(1tsp)


Mix them.


Now add 2 cups of water or according to the consistency you require.


Bring it to boil and add 1 cube of butter.
