Rajma Masala Recipe.. Punjabi Style Rajma Recipe. Dhaba Style Rajma Recipe.

Boil Rajma in pressure cooker and keep it aside. Boil till your Rajma looks soft and cracks appear on the surface. Remember to keep your Rajma stock in a separate bowl.


Take 2-3 large onions and chop them finely. You can also use the grater to grate the onions.


I've used the chopper to finely chop the onions but you can also use your knife to finely chop the onions.


Now, In a pan/kadai with 2tsp of vegetable oil put your whole spices into it. Spices include bay leaves, cinnamon, star anees, cloves, black pepper, small and large cardamon. You can avoid some the ingredients if unavailable.


Also grate small amount of nut meg if available. It brings in the beautiful aroma.


Also add half tbsp of shahi jeera/cummin. You can also use simple cumin. Let the spices crackle and spread the beautiful aroma.


Then, add your chopped onions to it.


Stir till it becomes soft and translucent.


Add 1tsp of ginger garlic paste.


Stir it for few minutes until the raw smell of ginger-garlic paste goes away.


Add half tsp each of turmeric and cumin powder.


Toss it.


And cover the lid for 2 minutes to blend all the spices and masalas together.


Now, take 3-4 large tomatoes.


Chop it into larger chunks as you need to grind them.


After removing the lid you'll observe as below.


Add your blended tomatoes into the pan.



Stir and add kashmiri chilli to the mixture.


Then add 1tsp of Rajma Masala.


And also add 1tsp of coriander powder.


Stir all of them together.


Cover the lid and let the spices and tomatoes cook for 10 minutes.


Stir once in between and after 10 minutes add salt as per taste.


And also add half tsp of garam masala.


Stir again.


Stir till you see all the masalas blended well.


Now, it's time to add your boiled Rajma to the spices.



Mix well.


And then add your Rajma extract/stock that was kept aside.



Mix well.


Taste once and if extra salt is required add pinch of it/as per requirement.


Stir well.


Let it boil and take 1tsp of kasturi methi between your palms. Crush it and spread all over the Rajma curry.



Mix it well.


Cover the lid again for 2-3 more minutes.


Add 1tsp of butter to the Rajma Masala. This step is completely optional.



Stir it again.


Now, add ginger julienne.


Also add slit green chilies to the curry.


Stir once and you are ready to server yummy Punjabi style Rajma Masala.


Serve Hot.
