Butter&Custard Cookies Recipe. Crisp Butter and Custard Cookies Recipe.
In a large bowl take two large tsp spoons of room temperature butter.
Also add 2tsp of powdered sugar or according to your taste.
Whisk it well.
Add few drops of vanilla extract.
Now add 1tsp of baking powder or half tsp of cooking/baking soda.
Mix it properly by whisking.
Now you'll need 2 eggs.
Now, take 2 small bowls, in one bowl separate yolk of 1 egg as we'll need it later and the other 1 egg and egg white of the previous egg in a different bowl.
Whisk the the bowl containing the egg and the egg white. Keep aside the bowl with egg yolk.
Pour your whisked egg into the mixture.
Mix them properly with a whisker to make it smooth and fluffy. You can also use your fork or spoon to whisk.
I've taken vanilla flavored custard powder below, but it's completely your choice. Mix half cup of custard powder. Remember to sieve the custard powder to avoid lumps.
Now, add half cup of all purpose flour or maida. Remember to sieve it.
Now, comes the major part. Gently mix the custard and all purpose flour by folding in the items together. Remember not to over stir or mix or whisk them as this would spoil your cookies making it too hard.
It must appear something like this.
Grease your baking tray with butter and then spread the flour to avoid sticking of the cookies. You can also use parchment paper if available.
In a bowl take few spoons of your granulated sugar.
It's time to shape your cookies. Take small amount of your cookie dough between your finger and try to shape it into rounds. Remember to do this with your light hands as over mashing of your dough would again lead to hardening of cookies.
Make them into rounds.
Dip it into your sugar bowl.
Coat it with sugar. This would caramelize your cookies making it look super awesome.
Spread the bowls all over the tray. Remember to keep enough distance between each balls as it would spread later.
Now, it's time for your egg yolk that you had kept aside. Into that mix 1tsp of room temperature milk.
Stir them together.
Dip your fork into the egg and milk mixture and quickly place it over your cookie balls.
Also press it a little to give that beautiful stripes shape to the cookies. Remember not to press too hard. When you do it with egg mix, the egg, milk and sugar starts to caramelize, it gives a beautiful color to the cookies. At the same time the crunchiness increases. You can also use soft baking brush to spread the egg mix over the cookies and then with a fork make the stripes.
So, it would appear as below.
Repeat the same for all the cookie balls.
Preheat your oven for 5 min at 200 degree Celsius and then insert your baking tray for 20 minutes at 200 degree Celsius.
Let it cool and get ready for yummilicious Crispy and Crunchy cookies.
