Sweet Mango Chutney. Mango Pickle(SweetnSour).


Take raw mango of any variety.


Peel and cut them into square chunks.


In a pan with few tsp of vegetable oil/ghee add the chopped mangoes.


Stir the mangoes until it turns bit soft and brown. Don't overcook them.



Keep the fried mangoes aside.



 For tempering: 2-3 dried red chiilies, paanch foran(which includes fenugreek seeds. fennel seeds, black mustard seeds, black cumin/onion seeds and cumin-all half tbsp  ), bay leaves,bac pepper cones, lavang.


In a same pan add all the above tempering ingredients in 1tsp of vegetable oil.


Once the crackling starts, we shall start with the sugar syrup.


The proportion of sugar must be like: if you add half cup of sugar, you'll need 1 cup of water.


Add both of them in the same pan.



Let it boil and reduce a bit.


Once you start to feel the stickiness of the sugar syrup, add your fried mangoes.



On a low flame, let the mangoes soak the syrup for 5min.


And you're done. Garnish with few mint leaves.


You can use it for more than a week, if kept in refrigerator.
