Hakka Noodles,Chowmein, Chinese, Indian style Noodles.

                                                          Steps to prepare hakka noodles.


Boil any noodles(egg noodles, plain noodles, etc) in plain hot water and drain it and keep aside. Make sure, you don't boil too much and also wash with cold water.

Chop vegetables of your choice which may include onions, red/green/yellow bell peppers, carrots, French beans, garlic 7-8 cloves, green chilli, etc.

Take a pan/kadai and heat with 2tsp of vegetable oil in it. Once the oil is hot, add garlic first and then onions and then rest of the vegetables with a pinch of salt and black pepper powder. Toss the vegetables. You need not over cook them. 3-4 min should be fine. Now, lower the heat and empty the pan in a small bowl. Keep fried vegetables aside.


It's time for the boiled noodles, take the same pan and heat 5-6tsp of vegetable oil. Once the oil is hot add 1tbsp of sugar in it. Let the sugar to be charred, then add few pods of chopped garlic in the pan. After few second add your boiled noodles and start tossing them. Fry them for 5 min and then add salt, black pepper powder, azino moto(white crystals-completely optional) and toss. Now, add 3tsp of soya sauce, 3tsp of chilli sauce, 2 tsp of vinegar, 5 tsp of tomato ketchup and start frying. You need to continuously fry the noodles to avoid sticking at the bottom. You are just few min away. Add all your previously fried vegetables. We do this to retain the crunchiness of the veggies. Toss for few minutes and cover the pan with a lid and switch off the flame. You are ready to serve the hot and yummy noodles!!
