Hyderabadi Chicken Biryani Recipe.Simple and Easy Chicken Cooked in Rice with beautiful flavors. Step by Step Recipe with Photos.

Take 2 Cups of uncooked Rice in a heavy bottom vessel. The choice of Rice depends on you.





Clean the rice properly and drain off the excess water.
 

Now add 3-4 bay leaves.
 

3-4 green cardamom.
 

Small piece of cinnamon.
 

1-2 star anees.
 

Few black pepper.
 

1-2 large cardamon.
 

1/4th tbsp of shahi jeera/cumin.
 

Half tbsp of salt.
 

Half tbsp of sugar.
 

1 tsp of ghee/clarified butter.
 
 

Now add water. Add water at least triple the amount of rice. Don't worry if the water is excess because you'll need to strain the rice anyway.
 
 

Once you notice that the rice is just half cooked strain it off.
 

Keep it aside.
 

Take 1Kg of clean chicken or as per your requirement and add half tbsp of turmeric powder.
 

Add 1 tbsp of red chili powder.
 

Add 1 tbsp of ginger-garlic paste.
 

Add half tbsp of salt.
 

Also add any chicken biryani masala/chicken masala available in the super market or you can also prepare it at home too.
Grind/Powder the below shown ingredients.



 

Mix all the ingredients well.
 

Now take a hung curd as shown.
 

Add 4 large tsp of curd.
 
 

Mix all of these well.
 

Take one bowl full of fresh mint and coriander leaves.
 

Chop them.
 

And mix it with the marinated chicken.
 

 

Also add half lemon juice.
 

Mix it all together.
 

Add 2-3 tbsp. of rose water for the rich fragrance.


Slice finely 2-3 red onions length wise.
 

And add some vegetable oil in your pressure cooker. Once hot add sliced onions to it. Let the onions caramelize rather turn till it turns brown.
 

Also add 2-3 potatoes(large pieces) for that extra touch. 
 

Stir fry for 1-2 minutes.
 

And then add your marinated chicken to it.
 

Give a good mix and stir for 1-2 minutes. Once you notice water separating from the chicken pieces.

 

Cover the lid on low flame just after the pressure is created.
 

Release the whistle after 4-5 minutes. Remember you must still see the water left out.
 

It's time to add your half cooked rice.
 

Make a layer over the chicken. Don't mix it.
 

Then in a bowl with little milk add a pinch of saffron.
 

Mix it.
 

And gently spread it over the rice.
 

You can also add half cup of water now, in case you observed that the water left  by chicken would not be enough. Cover the lid for again 5 minutes for everything to be cooked evenly.
 

After 5-7 minutes release the pressure and open the lid and spread caramelized onions all over it to give that crunchy and taste full of flavors.

 

And you are ready to serve the YUMMY chicken Hyderabadi Biryani. Serve it with raita/curd. And I can challenge you that your guests will love it.
