Properly clean AMLA under running water. Amount depends on your choice.


Drain off excess water and wipe it with a clean towel.


Now take a pan/kadai on a high flame. Once hot, add about half cup of mustard oil. Again you can chose oil of your taste. But mustard oil works best. Let the oil heat till you see the smoke out of it.


It's time to dip your clean and dry AMLA's into the oil.


At this point your heat must be on a medium flame. Add 2-3 tsp of salt.




And 2 tsp of turmeric powder.


And also add 2 tsp of red chilly powder.


Stir and mix well. Keep the heat at low flame now and let it cook.


It will take around 10-15 minutes or may be less. You'll notice that the berries(AMLA) is quite soft now and that is when we are done. Switch off the flame.


Separate out all the berries(AMLA) from the pan to a bowl.




Let it cool down and then start removing the seeds from it. Make sure you break open the AMLA only through mark on it as shown below.


Similarly do the same for all the berries/AMLAS and give a good mix.


Add 1tbsp of kalongi/Nigella Seeds to it.


Add 1tbsp of Ajwain also known as Ajowan Caraway, bishop's weed or carom, is an annual herb.


Mix well.



Store it in a clean and dry container. You can use this with a paratha/rice/chapatti. It tastes awesome. You can use this for months when kept in a refrigerator.
