Delicious Sambhar Recipe. Lentil-based vegetable stew or chowder based on a broth made with tamarind.

Soak some tamarind in water and keep it aside.


Now, in a pressure cooker take about half cup of tur daal also known as Pigeon Pea.


Then add 2-3 cups of water to it.



Once the boiling starts add half tbsp of red chili powder.


Also add half tbsp of turmeric powder.


Add salt to taste.


Chop the below vegetables bigger in size. Below veggies include 2-3 tomatoes, 1 carrot, ridge gourd, pumpkin, bottle gourd, half onion, french beans, slit green chilies, curry leaves and few peeled garlic pods. You can add as many veggies as you can of your choice.


After adding salt and chili and turmeric let it boil and then add all the above chopped veggies.



Give a good stir.


Then cover the lid for 3 whistles on high flame or 5-7 minutes on low flame. 


So when you open the lid it must look something as below. It must not be over cooked.


Put the flame on a medium flame and add 1tsp of Sambhar masala/powder.



Smash the tamarind pulps that you had soaked earlier.


Strain the juice into the broth.


Let it boil and cover the lid.


Cover the lid for 2-3 minutes or until one whistle to cook sambhar masala and tamarind juice.


Meanwhile we'll start with the tempering. In a pan with 1tsp of vegetable oil add 1tbsp of mustard seeds.


Let it crackle and add 2-3 dried red chilies.


Add roughly chopped half onion, 1 green slit chili and 7-8 curry leaves.


Stir well.


Also add pinch of asafoetida/hing.



Mix well and add it in the Sambhar.



Also add chopped coriander leaves for garnishing and you are ready to serve.


Serve it with idli(rice cake), dosa or steam rice.
