Potato and lentil Dumplings Vegetable Curry Recipe. Aloo Wadiyan ki Sabzi. Aloo Mangodi Sabzi. Aloo Badi.


Peel and cut your potatoes into big chunks.


Amount of potatoes depends on the number of people to be fed.


Clean the Potatoes with running water.


In a bowl take about 100-200gms of lentil dumplings also called as badi/bodi/wadi/wadiyan.


Crush the dumplings. Don't over crush them.


It must look something like this and keep it aside.


In a pan take 1 tbsp of vegetable oil, once hot and add half tbsp of cumin.


Also add half tbsp of small mustard seeds.


Let them crackle.


Then add your crushed wadi/badi/lentil dumplings into it.


On a medium flame turn it upside down till it turns golden brown.



Once you see it turning golden brown keep it aside.


On a medium flame add ghee/clarified butter in a pressure cooker.


We shall start with the gravy/curry now.

For Tempering: Bay Leaves, Cinnamon stick, lavang/cloves, choti/badi ilainchi(cardamons), star anise, peppercones and grated nutmeg.
P.S. Don't worry if you don't have all the above ingredients. Even few of them should be fine.


Add all of the above in a ghee/clarified butter.





Peel and crush 2-3 cloves of garlic.


And add crushed garlic after you start to feel the aroma of the whole spices.


Grate small piece of ginger.


And chop 1 onions.


Add the onions.


Stir and add the grated ginger.


Stir till the onions turn golden and add salt as per taste.


Add half tbsp of coriander powder. 


Also add half tbsp of turmeric powder.


Also add half tbsp of cumin powder.


Also add half tbsp of chilly powder.


And add half tbsp of gram masala powder. You can prepare garam masala by grinding all the whole spices (Bay Leaves, Cinnamon stick, lavang/cloves, choti/badi ilainchi(cardamons), star anise, peppercones. mace and grated nutmeg )mentioned above.



Combine all the ingredients.


Chop 1-2 tomatoes.


And add to the masalas. You can add tomatoes only when the masalas are cooked. Masalas  gets cooked in 4-5 minutes.


Mix them well.


And let it cook on a medium flame till the tomatoes become soft.


Now it's time to add your potatoes from step 1.


Mix it real good.


And then add your crushed golden brown dumplings that you had kept aside.



Again give a good mix and let it fry for 3-4 minutes on high flame.


Now, it's time to add water. Add about half cup of water or according to the consistency of curry/gray you like.



Stir.


And cover the lid. Let it cook for 7-8 minutes.


After 8 minutes you'll see that the Potato and lentil Dumplings Vegetable Curry is ready. Add 1/4th tbsp of garam masala to it and you are done.


Serve with steam rice or chapati. You'll love it.
