Chicken Rezala Recipe. Kolkata Style Bengali Recipe. White Chicken Curry.


Take two large onions for 1Kg Chicken and put it in a mixer jar.


Grind it to a smooth paste and keep it aside.


Properly clean your chicken pieces and place it in a large bowl.


Now add 1 large tsp of onion paste to it. Remember not to add all the onion paste to this, rest will be required for the curry.


Add 1tsp of ginger-garlic paste.


And 3 tsp of curd to the chicken.



Add salt as per taste.


Combine the mixture well and keep it for marination for about an hour in the refrigerator.


Meanwhile, in a bowl of half cup of water take 1tsp of poppy seeds/posto.


And also add few cashew nuts to it.



Bring the mixture to boil. You can also microwave it for 3minutes.


Let the mixture cool and put it in a mixer jar for grinding.


Make a smooth paste and keep it aside.


Also take 2 large onions and cut in the shape of rings as shown below. Chop few green chilies too. 


Now in a heavy bottom pan add 2-3 tsp of ghee/clarified butter.



Add whole spices to the pan once the ghee melts/hot.


Let it roast.


Also grate some nutmegs to give extra flavors.


Add the remaining onion paste to the pan.


Fry for 2-3 minutes.


And then add 1tsp of ginger-garlic paste.


Give a good mix and let it stay until the raw smell of onion,ginger,garlic dissapears.


After 4-5min you'll notice the color changes and oil starts separating.


Then add your cashew/poppy paste to this.



Give a good mix and add salt as per taste.


Let the mixture cook on low flame for 1-2min and then add chopped green chilies.


In a bowl take 1 and half cup of curd/yogurt and whisk it.


Add the whisked curd to the pan.



Also add half cup of water to it.


Mix it well.


It's time to add your marinated chicken.


Slowly put all the chicken pieces to the curry.


Mix it well.


And cover it for good 10 minutes on a medium-low flame.


After 10min add 1tbsp of garam masala. You'll also notice that the butter/ghee is seen on the surface of the curry.


Add half tbsp of sugar for that restaurant style taste.


Now in a separate pan with 1tsp of ghee add few red chilies.


And ring onions for tempering. 


Let the onions turn brown. 


Then, add to the chicken.
